Dr. Balu M. Balasubramanian is a co-founder of CocoaTown. He holds a PhD in Polymer Chemistry, and spent over 15 years in the pharmaceutical industry as a drug development expert. He has published more than 25 scientific papers and holds 10 patents including a patent on Cocoa grinder and a pending patent on novel winnower machine. With his Physics, Chemistry and engineering background he understands the science behind chocolate processing. He enjoys solving engineering challenges. This unique combination helped him to invent, design and develop innovative cacao processing machines for craft chocolatiers.
He routinely teaches various aspects of cacao processes in workshops, forums and conferences such as Chocoa in Netherlands, Fine Chocolate Industry Association, and International Cocoa Organization etc. Recently he published an article on Particle Size Measurements and Scanning Electron Microscopy (SEM) of Cocoa Particles Refined/Conched by Conical and Cylindrical Roller Stone Melangers in Journal of Food Engineering.
